PuratosSourbot
Puratos, a global company known for its work in bakery, patisserie, and chocolate, teamed up with me on a project to build Sourbot — an automated sourdough robot designed for research and development. It helps start and grow small-batch sourdough cultures from scratch, tracks how they’re developing, and shares that data via a simple dashboard and API.
Puratos also runs the world-renowned Sourdough Library, a collection of sourdough cultures from around the world. It holds over 120 active sourdoughs, more than 1400 strains of wild yeast and lactic acid bacteria, and hosts a library of 3000+ open-source recipes online.
The project was a close collaboration with researchers and data scientists at Puratos. I designed and built the complete robot, including hardware, electronics and software that integrated into existing systems via a cloud API.
The project was built at the hardware innovation and design lab Toolspace in Stockholm. Also check out the proof of concept that inspired the creation of this machine.
